Today we chat with one of the best chefs in our country: Javier Muñoz-Calero Calderón, and we have had the luxury of having recorded this podcast at his incredible restaurant Ovillo.

Proud of his roots and of Águilas, his small Murcian town, Javier has lived and traveled all over the world and therefore feels like a privileged person. “I don't understand borders, I only understand human beings.”

Very, very superstitious, Javier Muñoz-Calero has confessed to us that as a child he hated vegetables, he resists baking and would be happy living on board a ship.

Anarchic and with very clear ideas, Javier studied at the César Ritz Hospitality School in Switzerland and at Le Cordon Bleu in Paris. He has worked in Thailand and the United States and was a cook at the residence of the United States ambassadors in Madrid. At the head of successful restaurants... One day, he left everything.

With Javier we have talked about cooking, dreams, his large family and his dream: to be able to fulfill what he started with his restaurant Ovillo before the pandemic by re-reconciling his professional and personal life, something that he values ​​both for himself and for everything. his team. A team of which more than 80% of the people come from the Raíces Foundation, which works for the labor and social incorporation of young Spanish and foreigners in vulnerable situations. He has worked with them since 2010. “For me, they are all my children.”
